sweet&sour baked beets

Baked beets are not only extremely healthy but also delicious both as they are baked and as a basis for further culinary experiments. 

Baked beets take time to prepare so I always prepare them in a big batch. Some of them I consume immediately after baking, cause they are soooo good. The rest of them I either refrigerate or freeze for a later use.

 

Ingredients
2-3 kg beets
freshly ground pepper
salt
olive oil
balsamic or wine vinegar
optionally: fresh thyme

1. Peel beets (I recommend using rubber or latex gloves, not to ruin your manicure) 
2. You can bake whole beets, or cubed or cut in wedges according to your preferences
3. Place beets in baking dish
4. Pour olive oil and vinegar onto beets, sprinkle with salt, pepper and thyme
5. Cover tightly with aluminium foil
6. Bake at 200-220 centigrades for about 2-2,5h. Beets after baking should be  Piecz w piekarniku nagrzanym do 200 - 220 stopni przez około 2 - 2,5 godziny.
